ABSTRACT

Recent mushroom is extremely perishable and deteriorates straight off once harvest. It develops brown color on the surface of the cap because of the lyses of cell and catalyst action of polyphenol enzyme that ends up in shorter period. Being extremely perishable in nature, the recent mushrooms got to be processed to increase the off-season convenience by adopting acceptable disambiguation and process into added merchandise. The added merchandise are the necessity of the hour for the mushroom growers not solely to scale back the losses however conjointly to boost the financial gain by value-addition to spice up the consumption of mushroom. The potential added merchandise may be developed either by changing freshly harvested mushrooms into ketch-up,    murabba, candy, chip sand pickles or by dehydrating freshly harvest home mushrooms into dehydrated type so creating soup powder, biscuit, nuggets and Ready–to–eat mushroom curry (RTE). This critique summarizes the knowledge concerning disambiguation technologies and price addition of recent mushroom typically followed worldwide.
